If you are set on insulating underneath, one good way is to use the insulation boards that you find at home improvement stores. The boards look like styrofoam (they may be, I don’t remember) and vary in size (usually 16″ x 60″), but they have different R ratings for their insulation factor. They can simply be fastened between joists using button head nails.
For underneath a house, look for a waterproof product.
